Now, how about some fantasy football tailgating recipies to share for the holidays?

I’m making Rice Pudding with Almonds and Cherry Sauce for dessert tonight.

And Bourbon Pate for an appetizer tonight.

On Saturday I’m making a couple racks of lamb with mint sauce, buttered polenta and balsamic glazed carrots for my family. You may have to wait until I get back in town for those recipes though.  We’re heading to the cabin for a very merry Christmas.

I’ll be handing out to the family tomorrow my baking endeavors: ginger spice cookies, and cranberry-orange bread with a Grand Marnier icing. Didn’t get around to making my curried cranberry-walnut cheese balls.

I was in two Fantasy leagues this year, and got second in both of them.

I made Raspberry Ice Cream and Strawberry tonight…

I am severely baking impaired and managed to successfully make (with the help of my boyfriend) really delicious iced sugar cookies. We can now bake exactly two things with good results: sugar cookies and margarita cupcakes.

The key to good sugar cookies (and all butter cookies) is handling the butter. Got to keep that butter cold throughout the process otherwise your cookies wont rise. Chilling the dough before making the cookies helps a ton also.

I make a mean Ginger Snap cookie.

Mrs. Lungs and I made our infamious bourbon balls (this isn’t our recipe, but it is close) last weekend. The ones I brought to the office are already gone. Simple and fun  to make — no oven needed.

Refigerate overnight, and they are ready to eat. Hint: they taste better at room temp. — unlike baked cookies, the booze won’t evaperate from these babies!

The other thing that will make your cookies look awesome and cook more evenly is to use a disher to size the dough. I use a #40 if I’m making for a party or a #70 if I’m making for work.

bob, I made similar ones last year and ones using oreos. I love them, but didn’t make cookies or any treats this year.

noodleman, I love cheese balls. I loved them when they were’t popular and I love them now when they are.

Bob, someone brought bourbon balls to our holiday party last weekend and they were awesome.

Dougie_D, I made mine with vegan margarine. I was worried that they wouldn’t rise, but they did. Nobody could even tell they were vegan. That’s when you know a vegan baking recipe is a success.

I sort of think Vegans needed to be hugged more as children. I understand the philosophy but like anything taken to the extreme it starts to looks a little crazy.

I don’t eat mammals or marsupials but I do eggs and dairy. If you don’t like cheese you can’t be my friend.

Well maybe but you won’t be invited over for dinner.

What marsupials would you eat if you did eat marsupials? I’ve never heard of anyone doing that outside of West Virginia, where possum pie is sometimes on the menu.

Anyway, mnspeakers, deck whatever needs decking with boughs of whatever you like to deck things with.

My uncle from Kentucky, Cecil Higgenbotham (no kidding!), is a great fan of possum stew.

@kc!: I used to buy a very good curried cranberry-walnut cheese ball at Lunds/Byerlys … then discovered I could easily make my own for, like, 1/3rd the price. Had fun doing so last year but didn’t this year because my kitchen was still a mess from my baking frenzy last weekend.

It’s best on sesame-rice crackers, btw.
