New Braunfels = Smoked Beef, preferrably brisket or ribs, possibly sausage. you're describing more of a Carolina phenomenon.

Pork on an open flame; no good.

Now is if the barns (and surrounding Hickory grove) would have burned for 8 hours at about 220 degrees, I'd be there with vinegar sauce and coleslaw in a New Braunfels minute.

I've made smoked malt beers, and for my money they taste more like the bacon flavor you would want in a beverage. Sweet and just a touch of that smokey flavor, wish I had some now.

speaking of, has anyone had the bacon cocktail they are serving at Town Talk Diner?

no, but I made my own bacon infused bourbon, just finished straining it out last night. tried it side by side with just plain old Jim Beam neat. It could have been my method or ratios, but the bacon bourbon came out a tad too porky. I prefer the straight bourbon. I would say if you must combine bourbon and bacon, baste your bacon with a little bourbon and perhaps some real maple syrup as you cook it.
Figures. It was supposed to rain (TSs) yesterday, so I drove. Today, I bike, and it's probably going to rain.
